| Grand Marnier Soufflé |
| Yields: 4 - 12 oz soufflé servings |

| Ingredients |
1 C milk
6 T butter
9 T flour
1/3 C, 1 T granulated sugar
4 ea egg yolks
1/8 C Grand Marnier
7 ea egg whites
pinch cream of tartar

| Soufflé |
| In a separate bowl, mix egg whites with cream and whip
until foamy. Next add 1 tablespoon sugar and whip to achieve
soft peaks.
Whisk 1/3 of the egg mixture into the base recipe then gently
fold in the remaining mixture.
Set oven to 400° and bake in a buttered and sugared soufflé
dish for approximately 15-20 minutes.
Serve immediately.

| Method |
Base
Bring milk and butter to a boil in a heavy pot. Combine flour
and 1/3 cup of granulated sugar in a bowl and add to the
boiling solution.
Whisk until the mixture pulls away from the sides of the pot.
Place mixture in a mixing bowl and slowly add egg yolks.
Mix until cool and then add Grand Marnier.
