Heirloom Tomato and Housemade Mozzarella Salad,
Yields: Service for 4
Ingredients
4 heirloom or vine ripe tomatoes
1/2 lb fresh mozzarella
1 loaf olive bread or french baguette
2 T extra virgin olive oil
2 T balsamic vinegar
2 T finely shaved basil
to taste salt and pepper
Presentation
  • Arrange tomatoes and mozzarella around the plate.
  • Place toasted bread in the middle of plate and drizzle with
  • olive oil and balsamic vinegar.
  • Season with salt and pepper, then garnish with finely
  • shaved basil leaves.
  • Method
  • Cut tomatoes into medium size pieces, being careful not to
  • use stem portion.
  • Cut fresh mozzarella into the same size pieces.
  • Cut bread into 3/4” thick slices and grill or toast pieces in the
  • oven at 350º for 4-5 minutes, until just crisp on the outside.
