| Spinach Salad |
| Serves 4 |

| Ingredients for Spinach Salad |
3 bunches spinach, cleaned and dried
4 strips of fresh bacon, diced 1/4”
3 oz raspberry vinegar
1 t Grey Poupon mustard
1 oz French brandy
1 oz fresh button mushrooms, sliced
1/2 t brown sugar
to taste salt and pepper
4 dashes of Lee & Perrins Worcestershire Sauce
1 pkg Enokie mushrooms |

| Method for Spinach Salad |
• In a medium saucepan sauté bacon until crisp, add button
mushrooms and flame with brandy.
• Add vinegar, mustard, sugar,Worcestershire and salt and pepper;
bring to a boil.
• Pour dressing over spinach, wilt, toss, garnish with Enokie
and serve. |
