Seared Crab Cake
Yields: 4 servings
Ingredients for Seared Crab Cake
1/2 lb Dungeness crab meat
1/2 lb lump crab meat
1/4 loaf sourdough bread
1 C Japanese bread flakes
1/2 C shallots, diced
1/2 celery, diced
1/4 C Bristol cream sherry
1/4 C whole-grain mustard
1/4 C heavy mayo
1/4 C creamed horseradish
1 t cumin
1 t paprika
to taste salt and pepper
cilantro, chopped
corn meal
Method for Seared Crab Cake
• Sauté shallots and celery with oil; deglaze with sherry.
• Mix all other ingredients together; form into cakes with square mold.
• Dust with corn meal and cilantro.
