| Calamari alla Griglia |

| INGREDIENTS |
4-6 calamari fillets
2 T olive oil
1 t minced garlic
dash hot red pepper flakes
1 C white wine
juice from half a lemon

| METHOD |
| • Slice the calamari lengthwise, but don’t cut all the way through,
and grill. Be careful not to overcook or they will get tough.
Sauté the garlic in oil for a few minutes; don’t burn.
Add red pepper flakes.
Add grilled calamari and toss to coat.
Serve with the sauce and wedges of lemon. |
