Calamari alla Griglia
Yields: 2 appetizers
INGREDIENTS
4-6 calamari fillets
2 T olive oil
1 t minced garlic
dash hot red pepper flakes
1 C white wine
juice from half a lemon
METHOD
• Slice the calamari lengthwise, but don’t cut all the way through, and grill. Be careful not to overcook or they will get tough.
  • Sauté the garlic in oil for a few minutes; don’t burn.
  • Add red pepper flakes.
  • Add grilled calamari and toss to coat.
  • Serve with the sauce and wedges of lemon.
