| Ingredients for Shrimp & Scallops |
3 each Shrimp
3 each Scallops
3 oz Spinach, wilted
2 oz Clarified Butter
3 oz equal amounts of Crab and Cream
Cajun Spice, garnish
1 each pre-baked Puff Pastry

| Method for Shrimp & Scallops |
• In a heated sauce pan, over high heat, add clarified
butter.
• Add scallops and sear on both sides. Add shrimp
and sear.
• Add heavy cream, crab claw meat and season
with salt and pepper. Bring to simmering boil and
remove from heat.
• In a pasta basket, add spinach. Wilt in boiling
water and strain.

| To Plate |
• Scatter strained spinach in a round plate. Top
with puff pastry, then crack a hole on top of pastry
making a pocket.
• Finally add shrimp and scallop sauce into pocket,
garnish plate with cajun spice. |
