| Baked Goat Cheese with Tomato Sofrito |

| Ingredients for Baked Goat Cheese |
4 oz Mild Goat Cheese
1 1/2 cup Tomato Sofrito
12 Pieces Garlic Toast

| Method for Baked Goat Cheese |
• Place Goat Cheese in a 12 oz round oven proof
baking dish with 1 1/2 cup of sofrito sauce
around it.
• Bake in 375 degree oven for 15 minutes until
goat cheese starts to brown. Serve with garlic
bread for dipping.

| Ingredients for Tomato Sofrito |
1/16 cup Extra Virgin Olive Oil
1/8 cup fresh Garlic
1/2 cup diced Onions
3 cans of San Marzano
1/2 tbsp Oregano
1/8 cup chopped Green Bell Pepper
1/2 cup fresh Cilantro
1/4 cup ground Cumin
1/16 tbsp Kosher Salt
1 tsp Black Pepper

| Method for Tomato Sofrito |
• Sauté onions and bell peppers until caramelized
in a sauté pan add cumin, sauté 1 more minute.
• In a larger pan, sauté fresh garlic until
caramelized (golden brown).
• Add tomato and rest of ingredients
except cilantro.
• Cook 20 minutes, add cilantro and puree in a
food processor or blender (be careful if liquid is
hot, it will expand when pureeing).
Note: Will make more sauce than necessary, always
great with pasta or fish.
