| Ingredients for Zabaglione |
16 Egg Yolks
1 cup Sugar
1 cup Madeira Wine
1 tsp Vanilla
Amaretti Cookies
fresh Mint Leaves

| Method for Zabaglione |
• Put egg yolks and sugar in heat-proof bowl and
whisk until mixture is thick.
• Gradually add Madeira while whisking.
Add vanilla.
• Place over double boiler at a simmer and continue
to whisk 5-7 minutes until mixture is thick and
mousse-like consistency.
Pour into glasses or
ramekins.
• Garnish with Amaretti cookies and fresh mint sprig |
