| Menger Tortilla Soup |

| Ingredients for Menger Tortilla Soup |
5 ounces ground beef
¾ cup yellow onions, chopped
¼ cup Poblano peppers, chopped
½ cup Anaheim peppers, chopped
1 ¼ cups tomatoes, diced
½ cup tomato paste
3 quarts chicken stock
½ teaspoon of cumin
4 sprigs cilantro
½ teaspoon granulated garlic
Black pepper to taste

| Garnish, per serving: |
2 tablespoons of deep-fried tortilla strips
1 teaspoon Monterey Jack cheese, grated
1 teaspoon cheddar cheese, grated

| Method for Menger Tortilla Soup |
Brown ground beef drain fat. Add onions, peppers and tomatoes. Sauté until just tender. Add tomato paste. Sauté lightly (do not let paste burn). Add stock and seasoning. Bring to a boil simmer for 45 minutes. Before serving, skim excess fat. To serve, pour soup into bowls, garnish with deep-fried tortilla strips and 2 teaspoons of cheese blend.
