| Chart House at the Tower of the Americas Macadamia Nut Crusted Halibut |
| 4 Each. 8 oz. Halibut filets |

| Ingredients: Macadamia Crust |
• 3 cups Macadamia Nuts - diced
• 1 cup * Panko (Japanese bread crumbs)
• ¼ cup Rice flour
• 1 cup melted butter

| Ingredients:Peanut Sauce |
• 1/2 cup Creamy Peanut butter
• 1 tsp. * Sambal chili paste
• ½ tsp Salt
• ¼ tsp Black pepper
• ¼ cup * Seasoned Rice Vinegar
• ¼ cup Soy sauce (light)
• ½ cup Coco Lopez (Cream of Coconut)
• ¾ cup * Coconut milk
• 2 Tbsp. Cilantro - chopped
• 1 ½ cup water

| Ingredients: Mango Glaze |
• 1 lb. Fresh Mangos – ½ “ diced
• ½ cup of Mango juice
|
| PREPARATION |
1. Prepare macadamia crust. Combine diced macadamia nuts, panko, rice flour, melted butter and mix well.
2. Prepare Peanut sauce. Combine all ingredients – mix well.
3. Prepare Mango Glaze. Combine mangos and mango juice in a blender and blend on low speed for 3 minutes.
4. Take 4 each, 8 oz. Halibut filets. Place on baking sheet. Sprinkle with salt and pepper. Lightly coat fish with macadamia nut crust.
5. Place in 350 degree oven. Bake for 16 minutes.

| To Plate |
• Place 3 oz. of peanut sauce in center circle of the plate.
• Place the Macadamia nut crusted halibut in center of the plate.
• Squeeze Mango glaze in a wave over the top.
• Squeeze Teriyaki glaze in a wave over the top*.
