| Ingredients for Greek Shrimp |
6 Shrimp (Tails On)
1/2 Roma Tomato, diced
1 Scallion, thinly sliced, white part only
8 Kalamata Olives, pitted and quartered
1/4 cup Crème Sherry
3/4 cup prepared Pesto Sauce
2 tbsp Virgin Olive Oil

| Method for Greek Shrimp |
• Sauté shrimp in extra virgin olive oil
approximately 1 minute per side.
• Deglaze pan with crème sherry.
• Add tomatoes, scallions, olives and pesto.
• Cook briefly until sauce is warm.
• Remove from heat.
• Stir in feta and serve immediately
