| Italian Crab Cakes |

| INGREDIENTS: |
3 cans of jumbo lump crabmeat
4 whole eggs
2tsp whole grain mustard
¼ cup of mayo
2tbs fresh chopped basil
2tsp old bay
¼ cup of shredded parmesan cheese
and just enough bread crumbs to hold together

| Method of Production |
| Mix all ingredients together in a pan heat ½ cup of olive oil over medium heat take crab mix and make into 4oz cakes then dust in flour and place into hot pan about 45 sec on each side place into oven heated to 400 for about 10 min and serve |
| Caper Sauce |
3 cups heavy cream
½ cup of capers
salt and pepper TT
¼ cup of whole butter

| Method of Production |
| Heat cream in sauce pan over medium high heat simmer for about ten min add capers and continue simmer for two min then take off heat add butter and mix till sauce becomes thickened |
