| St. James Guinness Stew |
| Yields: 8-10 servings |

| Ingredients for St. James Guinness Stew |
1 T olive oil
1.5 lbs tenderloin tips
8 C hot water
5 beef bouillon cubes
1 C medium onions, diced
1/2 C celery, diced
1/2 C medium carrots, coined
3 t garlic, minced
1/2 T salt and pepper
3/4 C+ 1 1/2 T Guinness>
1/2 lb potatoes, diced and boiled |

| Method for St. James Guinness Stew |
• In a large stockpot, heat oil.
• Add tenderloin tips, all vegetables and salt and pepper.
• Brown meat and continue to cook until onion are clear, about 10
minutes.
• Add Guinness, potatoes, beef base and water then simmer for 1 hour.
• Thicken with roux or cornstarch to the consistency you like.
• Best if served in a bread bowl. |
