| Fried Green Tomatoes |
| Serves 4 |

| Ingredients for Corn Sauce |
2 ears fresh Corn, shucked and cut off the cob
2 oz Vidalia Onion, diced
2 cup Heavy Cream
1 tsp AP Flour
1/4 lb Butter
Salt and Pepper, to taste

| Ingredients for Fried Green Tomatoes |
8 oz Vegetable Oil
4 oz Corn Meal
8 oz AP Flour
2 oz Milk
Salt and Pepper, to taste |
| Method for Corn Sauce |
• In a sauce pot, add butter and onions and cook on low heat.
• Cook onion for 2 minutes.
• Add flour until thick.
• Add heavy cream and wait until it comes to a boil.
• Add Corn and cook for 1 minute.
• Add salt and pepper to taste

| Method for Fried Green Tomatoes |
• Cut 4 slices out of each tomato.
• Add the corn meal and flour together and mix completely.
• Place tomatoes in milk, then add the corn meal and
flour mixture.
• Heat vegetable oil in a frying pan.
• When the oil is hot, add tomatoes. Fry for 3 minutes. |
| For Presentation |
• Baby Greens
• Take 2 tomatoes and place over Baby Greens, finish with
2 oz. of Corn Sauce on top. |
