| Ingredients for Zesty Saffron Lemon Sauce |
3/4 cup fresh Lemon Juice
1 tsp Cider Vinegar
1 clove Garlic, minced
11/2 stick Unsalted Butter, cut into tablespoons
1/2 tsp grated Lemon Zest
1 tsp finely ground Saffron (diluted in 2 tbs hot
water right before using)
Salt & freshly ground Pepper to taste

| Method for Zesty Saffron Lemon Sauce |
| In a small saucepan, combine lemon juice, vinegar
and garlic. Bring to a boil; reduce heat to medium-
high and continue to boil until reduced to
1/4 cup, 10 to 15 minutes. Reduce heat to
medium-low and add butter, 4 tablespoons at a
time, whisking until just melted. Butter should
emulsify and thicken sauce slightly. (If the first
batch melts too quickly and thins out sauce, turn
heat to low, then continue.) Whisk in lemon zest,
salt and pepper and set sauce aside. Add Saffron
right before serving the sauce to maintain the
highest aroma. |
