| Joe’s Eggs |

| Ingredients for Joe's Eggs |
4 oz Spinach, fresh
1/2 cup Onion, sliced
1/2 Mushrooms, sliced
1/2 Italian sausage, cooked & crumbled
3 ea Eggs, fresh
2 oz Jack Cheese
Red Pepper Salsa, to taste

| Method for Joe's Eggs |
| In a 10” non stick pan saute’ spinach, onion,
mushrooms and sausage to wilt & heat.
Whisk three eggs in a small bowl until frothy
add to hot mix
Cook 3 minutes until eggs set, flip over and cook
two more minutes
Slide onto plate and top with jack cheese and
salsa. Enjoy. |

1 cup Roasted Red Peppers
2 clove Garlic
1 tbsp Olive oil
1 oz Whipping Cream
Salt & Pepper, to taste
