| Creamy Shrimp Bisque |

| Ingredients for Creamy Shrimp Bisque |
1/2 lb Shrimp with Shells
1 ea Fennel Bulb
1 ea Yellow Onion
8 oz chopped Plum Tomato
3 oz Brandy
2 qt Heavy Cream
4 oz Whole Milk

| Method for Creamy Shrimp Bisque |
| Peel shrimp and keep shells aside.
Dice fennel and onion. Sauté in olive oil until
translucent.
Add shrimp shells and cook until bright orange.
Add brandy, flambé and reduce to au sec (dry).
Add cream and milk and simmer.
Season with salt and pepper and adjust
consistency if needed.
To Serve: Sauté shrimp till cooked through.
Place in bottom of bowl and ladle soup over the
shrimp. Garnish with Curried Sour Cream. |
