PESTO CRUSTED RAINBOW TROUT
INGREDIENTS
2 each North American Rainbow Trout Filets
1 t Magic Seasoning Blends Seafood Seasoning
2 T Pesto
1 T Olive Oil
METHOD
  • If the fish is not boneless, remove all bones and cut the trout down the center to yield two filets. Leave the skin, tail and fins intact.
  • Sprinkle 1/2 teaspoon of the seasoning blend and one tablespoon of the pesto evenly over the meat side of one of the filets.
  • Repeat for the remaining piece of trout.
  • Place the corn oil on a griddle or large skillet set over medium high heat.
  • Lay the coated filets pesto side down and cook until lightly browned and a crust is formed.
  • Flip the filets and cook skin side down just until the fish is done.
  • Take care to not overcook the fish.
  • Serve with lemon and fresh basil.
