| PESTO CRUSTED RAINBOW TROUT |

| INGREDIENTS |
2 each North American Rainbow Trout Filets
1 t Magic Seasoning Blends Seafood Seasoning
2 T Pesto
1 T Olive Oil

| METHOD |
| If the fish is not boneless, remove all bones and cut the
trout down the center to yield two filets. Leave the skin,
tail and fins intact.
Sprinkle 1/2 teaspoon of the seasoning blend and one
tablespoon of the pesto evenly over the meat side of one
of the filets.
Repeat for the remaining piece of trout.
Place the corn oil on a griddle or large skillet set over
medium high heat.
Lay the coated filets pesto side down and cook until
lightly browned and a crust is formed.
Flip the filets and cook skin side down just until the fish
is done.
Take care to not overcook the fish.
Serve with lemon and fresh basil. |
