| Chocolate Soufflé |

| Ingredients: Base |
2 oz flour
2 oz sugar
1 1/4 C heavy cream
1 vanilla bean, split
2 egg yolks
1 egg
5 oz bittersweet chocolate, grated
1 oz butter

| The heat will melt the chocolate. |
| Method: Base |
| Mix together flour and sugar.
In a saucepan, heat heavy cream and vanilla bean
Whisk a little hot cream into the flour/sugar mixture,
then add the remainder; combine thoroughly.
Whisk in the 2 egg yolks and 1 egg.
Whisk in bittersweet chocolate and butter until smooth.
This is the base and may be kept in the fridge up to three days;
reheat slightly before using. |

6 egg whites
pinch salt
pinch cream of tartar
butter
sugar

| Method: Souffle To Order |
| In a mixer, on high speed, whisk egg whites, salt and cream of tartar.
Fold egg whites into chocolate base.
Pour into dishes.
Bake at 375 degrees approx. 15 minutes.
Serve with ice cream, whipped cream or crème anglaise. |
