Chocolate Soufflé
4 Servings
Ingredients: Base
2 oz flour
2 oz sugar
1 1/4 C heavy cream
1 vanilla bean, split
2 egg yolks
1 egg
5 oz bittersweet chocolate, grated
1 oz butter
Note
  • The heat will melt the chocolate.
  • Method: Base
  • Mix together flour and sugar.
  • In a saucepan, heat heavy cream and vanilla bean
  • Whisk a little hot cream into the flour/sugar mixture, then add the remainder; combine thoroughly.
  • Whisk in the 2 egg yolks and 1 egg.
  • Whisk in bittersweet chocolate and butter until smooth.
  • This is the base and may be kept in the fridge up to three days; reheat slightly before using.
  • Ingredients: Souffle To Order
    6 egg whites
    pinch salt
    pinch cream of tartar
    butter
    sugar
    Method: Souffle To Order
  • In a mixer, on high speed, whisk egg whites, salt and cream of tartar.
  • Fold egg whites into chocolate base.
  • Pour into dishes.
  • Bake at 375 degrees approx. 15 minutes.
  • Serve with ice cream, whipped cream or crème anglaise.
