| Spicy Tuna Avocado Salad |

| Ingredients: Salad |
3 oz lettuce, cut
1 oz daikon radish, julienne
1 oz cabbage, julienne
2 1/2 oz tuna, sashimi grade, inch cubed
2 1/2 oz avocado, inch cubed
2 T Japanese mayonnaise
1 t sriracha chili sauce
1 t garlic paste
1 T sesame oil
1 handful nori seaweed, chopped dry

| Ingredients: Dressing |
1 T soy sauce
1 T olive oil
1/2 T karashi mustard
1 t vinegar
1 t sugar
to taste black pepper

| Method: Salad |
| Make chili mayonnaise by adding mayonnaise, chili sauce and garlic
paste and mix well.
Add tuna and avocado to chili mayo.
Add sesame oil and soy sauce and mix well.
On a large plate, place lettuce and add daikon radish and cabbage on
top of the lettuce as the bedding.
Place the tuna and avocado mix on top of the bedding. |
| Method: Dressing |
| Add dressing around the vegetables.
Add 1 handful of chopped nori seaweed on the tuna and avocado. |
