| Yia Yia’s Braised Beef Short Ribs |

| INGREDIENTS |
4 beef short ribs
1 carrot, chopped
1 onion, chopped
4 cloves garlic, chopped
1 C dry red wine (Chianti or Rioja would be best.)
4 C chicken stock
2 C veal stock (Beef stock can be substituted, but it is
not as deep and flavorful.)
4 T peanut oil
1 C flour
to taste salt and pepper

| METHOD |
• Coat ribs in seasoned flour.
• Heat skillet on med-high heat.
• Add peanut oil and brown the ribs.
• Place browned ribs in a baking dish and add the onion, carrots and
garlic.
• Cover with wine and stocks.
• Bake at 325 degrees for 3 hours or until meat is thoroughly tender.
• Remove the short ribs from the braising liquid and skim off the
grease.
• Strain the sauce, removing all vegetables.
• Make a roux (butter and flour) and add to the sauce

1 T pepper

• This dish goes great with mashed potatoes, risotto or sautéed garlic
spinach. |
