| Sea Bass with Spicy Honey Lime Glaze |
| Yields: 4 servings |

| INGREDIENTS |
1/4 C fresh lime juice
2 T honey
4 large garlic cloves
1 serrano or jalapeño chile, seeded and minced
1 can chipotle chile in adobe sauce
1 T fresh cilantro, chopped
1/4 t corn starch
6 T olive oil
2 T fresh basil, chopped OR 2 teaspoons dried and crumbled
2 T fresh parsley, chopped
4 - 8 oz sea bass fillets |

| METHOD |
• Purée first seven ingredients in a blender until smooth.
• Pour mixture into small heavy saucepan and bring to a boil, stirring constantly.
• Reduce heat and simmer for one minute.
• Mix oil, basil, and parsley in a small bowl, then pour herb mixture
over fish, turning to coat both sides.
• Season fish with salt and pepper to taste.
• Grill or broil fish until cooked through, basting occasionally with glaze
and turning once (about 10 minutes per inch of thickness).
• Transfer to plates and serve. |
