Fresh Scallops
Crawfish Tails
Beurre Blanc
Lemon Juice
Fresh Thyme
Chicken Stock
Salt and Pepper |

| Method |
| Sweat garlic and shallots and add the fresh thyme.
Deglaze with stock, reduce and add crawfish.
Adjust with lemon juice, salt and pepper.
Pan-sear the diver scallops on one side to a golden brown. |
