| Ingredients for Yellow Fin Tuna Ceviche |
3 oz Yellowfin Tuna
2 oz Asian Ponzu
1 tbsp Avocado, small diced
1 chopped Serrano
Wasabi Powder
1 Fried Ginger Chip, for garnish
1 Cilantro Sprig, for garnish
1 tbsp Cucumber, diced

| Ingredients for Asian Ponzu |
1/2 cup Sake
2 tbsp Sesame Oil
4 cup Light Soy Sauce
1/2 cup Ponzu Oil
2 cup Fresh Lime Juice
1/2 cup Mirin
1 tbsp chopped Cilantro

| Method for Yellow Fin Tuna Ceviche |
• Place all wet ingredients in a food processor
and mix.
• Fold in chopped cilantro and allow to sit for at
least 1 hour.
• Season accordingly with salt and pepper.
• In mixing bowl, add tuna, chopped serrano
and Ponzu mix; then add cucumber and avocado
and lightly toss.

| Place in a small martini glass. Dust with Wasabi
powder, add ginger chip and cilantro sprig in
the center for garnish. |
