Roasted Garlic & Onion Soup
Ingredients for Roasted Garlic & Onion Soup
22 cloves Garlic
2 ea large Yellow Onion, cut into 2" cubes
2 ea large Potatoes, peeled and chopped
2 qt Chicken Stock
2 ea Bay Leaf
3 ea Clove
2 tbsp Ham Base
3 tbsp Olive Oil
Method for Roasted Garlic & Onion Soup
  • Heat the oil in a large soup pot. When very hot add the garlic and stir constantly until golden in color.
  • Add the onions and cook until the edges caramelize.
  • Add the remaining ingredients and cook until the potatoes are tender.
  • Puree the soup but do not strain. Serve very hot.
  • Serving Idea: Top with a drizzle of cream and garlicky croutons.
