| Ingredients for Roasted Garlic & Onion Soup |
22 cloves Garlic
2 ea large Yellow Onion, cut into 2" cubes
2 ea large Potatoes, peeled and chopped
2 qt Chicken Stock
2 ea Bay Leaf
3 ea Clove
2 tbsp Ham Base
3 tbsp Olive Oil

| Method for Roasted Garlic & Onion Soup |
| Heat the oil in a large soup pot. When very hot
add the garlic and stir constantly until golden in
color.
Add the onions and cook until the edges
caramelize.
Add the remaining ingredients and cook until the
potatoes are tender.
Puree the soup but do not strain. Serve very hot.
Serving Idea: Top with a drizzle of cream and
garlicky croutons. |
