| Halibut with Tarragon |

| Ingredients for Halibut with Tarragon |
2 tbsp Bread Crumbs
1/4 cup chopped Tarragon
Salt and freshly ground Pepper, to taste
3 lb Halibut or other White Fish Fillet, rinsed
and patted dry cut into 1/2 pound pieces
Canola or Olive Oil for searing

| Method for Halibut with Tarragon |
| Pat the fish filets dry. Sprinkle w/ salt and fresh
ground pepper on both sides. Then sprinkle
tarragon and breadcrumb on one side only.
Place a small amount of oil (about 1 tbsp for each
fillet) in a fry pan over medium-high heat. Add fish,
one piece at a time, tarragon side down. Turn each
fillet over as soon as the bread crumbs have a golden
color (about 1 minute or two, depending on
how hot the skillet gets). Place skillet in the oven
and allow fish to bake at 375 for a few minutes
(time varies with thickness of fillets) |
