Zesty Saffron Lemon Sauce
Ingredients for Zesty Saffron Lemon Sauce
3/4 cup fresh Lemon Juice
1 tsp Cider Vinegar
1 clove Garlic, minced
11/2 stick Unsalted Butter, cut into tablespoons
1/2 tsp grated Lemon Zest
1 tsp finely ground Saffron (diluted in 2 tbs hot water right before using)
Salt & freshly ground Pepper to taste
Method for Zesty Saffron Lemon Sauce
  • In a small saucepan, combine lemon juice, vinegar and garlic. Bring to a boil; reduce heat to medium- high and continue to boil until reduced to 1/4 cup, 10 to 15 minutes.
  • Reduce heat to medium-low and add butter, 4 tablespoons at a time, whisking until just melted. Butter should emulsify and thicken sauce slightly. (If the first batch melts too quickly and thins out sauce, turn heat to low, then continue.)
  • Whisk in lemon zest, salt and pepper and set sauce aside.
  • Add Saffron right before serving the sauce to maintain the highest aroma.
