| Sarki’s Omelet |

| Ingredients for Sarki’s Omelet: |
3 Eggs
2 oz. Spinach
2 oz. Onions
2 oz. Mushrooms
1 oz. Kalamata Olives
1 oz. Feta Cheese

| Ingredients for Crème Fraiche: |
1 cup whipping cream mixed with 2 tablespoons buttermilk.
Combine well in a glass jar and cover.
Let stand at room temperature (about 70 degrees F.) for 8 to 24 hours, or until thickened.
Stir well and refrigerate

| Method for Sarki’s Omelet: |
In a 10” non-stick pan sauté spinach, onion, mushrooms and olives to wilt and heat.
Whisk three eggs in a small bowl until frothy, add to hot mix
Cook 3 minutes until eggs set, flip over and cook two more minutes.
Sprinkle with half of the feta, fold in half
Slide onto plate and top with feta cheese and drizzle with Crème Fraiche. Enjoy!
