Creamy Shrimp Bisque
Serves 8
Ingredients for Creamy Shrimp Bisque
1/2 lb Shrimp with Shells
1 ea Fennel Bulb
1 ea Yellow Onion
8 oz chopped Plum Tomato
3 oz Brandy
2 qt Heavy Cream
4 oz Whole Milk
Method for Creamy Shrimp Bisque
  • Peel shrimp and keep shells aside.
  • Dice fennel and onion. Sauté in olive oil until translucent.
  • Add shrimp shells and cook until bright orange.
  • Add brandy, flambé and reduce to au sec (dry).
  • Add cream and milk and simmer.
  • Season with salt and pepper and adjust consistency if needed.
  • To Serve: Sauté shrimp till cooked through. Place in bottom of bowl and ladle soup over the shrimp. Garnish with Curried Sour Cream.
