| Caramelized Pear Pizza |

| Ingredients for Caramelized Pear Pizza |
16 oz proofed Pizza Dough Ball
4 oz Alfredo Sauce
3 oz Gorgonzola cheese
3 thinly sliced Fresh Pears
4 oz Granulated Sugar
1 cup Water
2 oz Provolone Cheese
2 oz Mozzarella Cheese

| Method for Caramelized Pear Pizza |
• Pre-heat oven to 425 degrees.
• Pre-heat pizza stone.
• Stretch dough ball with rolling pin to 14” pie
(tossing preferred).
• Combine alfredo sauce and 2 oz of gorgonzola
cheese in a one quart sauce pan. Stir on low
heat until gorgonzola cheese melts into
alfredo sauce.
• Spread sauce evenly on pie leaving a 1” crust.
• In a separate one quart sauce pan combine one
cup boiling water and sugar. Stir until reduces.
Add sliced pears to sugar mixture and cook till
softened. Remove from pan and lay separately
to dry on parchment paper.• Place pears on top of sauce in a fan formation.
• Sprinkle with remaining 1oz gorgonzola.
• Cook for 15-18 minutes or until crust is golden.
• Remove from oven and cut into 8 slices.
• Serve immediately
