| Heirloom Tomato and Housemade Mozzarella Salad, |

| Ingredients |
4 heirloom or vine ripe tomatoes
1/2 lb fresh mozzarella
1 loaf olive bread or french baguette
2 T extra virgin olive oil
2 T balsamic vinegar
2 T finely shaved basil
to taste salt and pepper

| Presentation |
| Arrange tomatoes and mozzarella around the plate.
Place toasted bread in the middle of plate and drizzle with
olive oil and balsamic vinegar.
Season with salt and pepper, then garnish with finely
shaved basil leaves. |
| Method |
| Cut tomatoes into medium size pieces, being careful not to
use stem portion.
Cut fresh mozzarella into the same size pieces.
Cut bread into 3/4” thick slices and grill or toast pieces in the
oven at 350º for 4-5 minutes, until just crisp on the outside.
