| COPA PUMPKIN CRUNCH |

| Ingredients |
1 large can of pumpkin
1 large can of evaporated milk
3 eggs
1 C sugar
1/2 t cinnamon
1 box of yellow cake mix
2 sticks melted, cooled butter

| Method |
| Line a 9X13 pan with waxed paper.
Mix 1 large can of pumpkin, 1 large can of evaporated milk, 3 eggs,
1 cup of sugar, and 1/2 teaspoon of cinnamon.
Pour one box of yellow cake mix over mixture.
Spread 1 cup of chopped pecans or walnuts over cake mix and press
them gently into mix.
Pour the cooled butter over all.
Bake at 350 degrees for 1 hour until done.
Turn upside down onto serving plate; remove waxed paper.
Beat 8-ounce package of cream cheese with 1 1/2 cups of
powdered sugar.
Add 3/4 cup of Cool Whip and mix.
Spread on top of sheet cake. |
