| Sweet Garlic Cream |

| Ingredients |
2 C garlic, peeled
4 C whole milk
2 C heavy cream
to taste salt
to taste white pepper

| Method |
| Cover the garlic with milk, reserving some milk.
Bring the garlic and milk up to a boil then immediately remove and
strain the milk.
Continue the process three times, discard the milk every time.
Once complete add the heavy cream then scold the cream with the
garlic.
Purée in the blender until smooth and season.
Pass through chinois and cool. |
