| Chef Farina’s Mango Poblano Glaze |

| INGREDIENTS |
2 ripe mangos
2 poblano peppers
1 red onion
1 fresh lime
1/2 bunch of parsley
to taste salt and pepper

| METHOD |
• Dice mangos, peppers and red onion. Mix together.
• Squeeze lime over mixture.
• Chop parsley and add.
• Salt and pepper to taste.
• Blend together in blender until mostly smooth.
• Coat chicken or white fish (sword, tilapia, sole, etc) and grill or bake.
