Bruschetta
Yields: 4 servings
Ingredients
1/2 French bread loaf
4 oz tomatoes, diced
1 oz Balsamic vinegar
2 oz olive oil
1/2 oz garlic, chopped
1 oz fresh basil, chopped
2 oz goat cheese, crumbled
Method
  • Pre-heat oven to 350ยบ.
  • Cut loaf of French bread in half, set one half aside. Cut remaining half length-wise.
  • Bake bread open-face in oven until crispy (approximately 4 to 5 minutes).
  • Pour olive oil in a skillet. Cook chopped garlic until slightly browned.
  • Add tomatoes and remove from heat.
  • Stir in balsamic vinegar and basil.
  • Spoon mixture on to open-faced bread. Sprinkle with goat cheese.
  • Place bread under broiler for about 1 minute (cheese will not melt).
  • Cut and serve warm.
