| Bruschetta |

| Ingredients |
1/2 French bread loaf
4 oz tomatoes, diced
1 oz Balsamic vinegar
2 oz olive oil
1/2 oz garlic, chopped
1 oz fresh basil, chopped
2 oz goat cheese, crumbled

| Method |
|
Pre-heat oven to 350ยบ.
Cut loaf of French bread in half, set one half aside. Cut remaining
half length-wise.
Bake bread open-face in oven until crispy (approximately
4 to 5 minutes).
Pour olive oil in a skillet. Cook chopped garlic until slightly browned.
Add tomatoes and remove from heat.
Stir in balsamic vinegar and basil.
Spoon mixture on to open-faced bread. Sprinkle with goat cheese.
Place bread under broiler for about 1 minute (cheese will not melt).
Cut and serve warm. |
