| Chicken or Beef Stay with Peanut or Cucumber Sauce |

| Ingredients Chicken or Beef Satay |
beef or chicken
1 t roasted coriander seeds
1 t sugar
bamboo skewers
2 t Nampla
1/2 C sliced onion
1 t butter or margarine
to taste curry powder

| Note |
| Sprinkle with a mixture of 3/4 cup coconut milk and 2 teaspoons
tamarind. |
| Method |
| Blend curry powder, coriander seeds, Nampla, sugar, onion, oil and
butter.
Cut chicken or beef into very thin strips.
Marinate at least one hour in the above blended ingredients.
Charcoal grill on skewers and sprinkle*; turn until done. |
| Ingredients Peanut Sauce |
1/2 T curry kang kua
1 t salt
1/2 t paprika
1/2 C peanut butter or ground peanuts
1/2 C palm sugar
3 C coconut milk
1 T tamarind sauce

| Method Peanut Sauce |
| Put in some coconut milk to boil.
Add the curry kang kua.
Cook and stir for 5 minutes.
Add remaining ingredients; keep stirring until a small amount
of oil rises to the top and remove from heat. |

1 cucumber
1 C sugar
1 t salt
2 green chiles, sliced
2 C vinegar
2 oz red onion, sliced
