| SEAFOOD BEIGNETS |

| INGREDIENTS FOR PASTA: |
3 c Flour
1 T Baking Powder
1 c Shrimp, chopped
1 c Crawfish, chopped
1 c Crabmeat
Green Onions
Parsley
3 Eggs
As needed Milk
To taste Salt,White Pepper and Granulated Garlic

| METHOD FOR FILLING: |
| In a bowl, add flour, baking powder, salt, pepper and garlic.
Whisk together to blend well.
Add shrimp, crawfish, crabmeat, green onions and parsley.
Fold until well incorporated.
Whisk with milk and eggs.
Mix slowly until well mixed.
You want to mix batter to the consistency so that it does
not run off the spoon but thick enough so it drapes off
the spoon.
Spoon into a 350 degree fryer until golden brown.
Serve immediately with your favorite dipping sauce. |
