| FILET DE POISSON LOUISIANE |

| INGREDIENTS |
2 Filet of White Fish
(Flounder, Puppy Drum,Trout)
1/4 lb+1 T Butter
1 T Oil
1 Banana, cut in half lengthwise
1 Red Bell Pepper, diced
1 Tomato, diced
2 pinches Parsley, chopped
2 Lemons
To taste Salt and Pepper

| METHODS |
| Season the fish filets with salt and pepper, then lightly flour.
In heated frying pan, put one tablespoon of oil and one of
butter.
Sauté the fish until fully cooked.
Place on serving plate.
Sauté the banana pieces very lightly (just until they have
some color).
Place banana on top of fish.
Sauté the red bell pepper and tomato, adding the
remaining 1/4 pound of butter last.
Let cook until the butter has a hazelnut color, then add
parsley and the juice of one lemon.
Pour butter mixture over the fish filets and decorate the
plate with the remaining lemon. |
