| Ingredients |
8 Slices Baby White Veal
Egg Wash
1 c Seasoned Bread Crumbs
2 lbs Lump Crabmeat
1 lb Chopped Mushrooms
1 c Chopped Shallots
Chopped Red Pimento
To taste Salt and Pepper
Light White Wine
Hollandaise Sauce

| Method |
| Dip veal in egg wash, then dredge with bread crumbs.
Pan fry veal and set aside.
Sauté mushrooms and shallots.
Add lump crabmeat, as much red pimento as desired and
light white wine.
Mix well.
Place veal on serving plate and top with crabmeat mixture.
Top with hollandiase sauce and serve. |
