| Goat Cheese Wrapped in Phyllo with Sweet-Onion Thyme Fricassee |

| Ingredients |
4 oz Goat Cheese, cut into four portions
4 Sliced White Sweet Onions
1 C Balsamic Vinegar
1/3 C Honey
1 oz Clarified Butter
4 Sheets of Phyllo Dough
1/2 t Chopped Thyme |

| Method |
| The day before serving, cook onions on low heat for four hours in their own juices.
Let cool and refrigerate until the next day.
The next day, cook the onions on low heat for another two hours or until they become the consistency of a compote.
Add 1/2 cup of balsamic vinegar and three tablespoons of honey.
Cook until slightly reduced and let it cool down.
Add the chopped thyme.
On a cookie sheet, lay down four sheets of phyllo dough, brushing each layer with butter.
Cut the sheets once horizontally and once vertically, getting four squares.
Divide the goat cheese into four pieces and place a piece on the center of each phyllo square , then top off by equally
dividing the onion mixture between the four squares.
Pick up the four corners of each square and twist to form a beggar’s purse.
Bake these purses in a 300 degree oven for five to six
minutes.
While the purses are baking, blend two tablespoons of the honey and a cup of the balsamic vinegar and whisk together until well emulsified.
Place the heated purse on a plate, drizzle the sauce around it, and garnish with lettuce. |
