| COWBOY STEAK |

| INGREDIENTS FOR BEEF TARTAR: |
1 each 30 oz.Dry Aged Rib Eye
2 each Fingerling Potatoes, quartered
2 each Baby Beets, roasted
10 each Haricot Vert, cleaned and blanched
6 each Chanterelle Mushrooms
4 oz Veal Stock or Glace

| METHOD: |
| Season the rib eye heavily with salt and fresh ground black
pepper.
Grill to desired temperature.
Blanch or roast your baby vegetables.
Season with salt and pepper.
Sauté the mushrooms in whole butter and season.
Add the veal stock to the mushrooms and reduce by half.
Place the baby vegetables on the plate and position the
cowboy steak on top of them.
Sauce the steak with the mushroom stock mixture and serve. |
