GINGER GAIGE
INGREDIENTS
Snapper Filet
Crawfish Tails
Mushrooms
Shallots
Pimentos
Butter
Lemon
Creole Seasoning
Flour
Eggwash
Breadcrumbs
METHOD
  • Dust snapper filet in flour.
  • Dip in eggwash and dredge in breadcrumbs.
  • Fry until golden brown.
  • Sauté crawfish, shallots, mushrooms in butter.
  • Add splash of lemon juice.
  • Take off heat and add cube or cold butter to bind sauce.
  • Top filet with sauce.
