Snapper Filet
Crawfish Tails
Mushrooms
Shallots
Pimentos
Butter
Lemon
Creole Seasoning
Flour
Eggwash
Breadcrumbs

| METHOD |
| Dust snapper filet in flour.
Dip in eggwash and dredge in breadcrumbs.
Fry until golden brown.
Sauté crawfish, shallots, mushrooms in butter.
Add splash of lemon juice.
Take off heat and add cube or cold butter to bind sauce.
Top filet with sauce. |
