| MICHAUL’S CATFISH PECAN |

| Ingredients |
1 Fillet of Catfish
1/4 c Flour
1 Egg
1/4 c Milk
1/2 c Pecan Pieces, chopped fine
Oil
Lemon Butter Sauce (recipe below)

| Ingredients for Lemon Butter Sauce |
1/2 c Liquid Whipping Cream
1/4 c Lemon Juice
1/2 t Salt
1/4 lb Butter

| Method |
| Dip catfish in mixture of flour, egg wash (1 egg and 1/4
cup of milk) and then pecan pieces.
Heat oil in sauce pan and pan fry catfish for 2 minutes
each side until golden brown.
Remove the catfish and serve in a platter topped with
lemon butter sauce. |
| Method for Lemon Butter Sauce |
| Bring ingredients to a boil then add 1/4 of roux to a
medium texture.
Then add slowly 1/4 pound of cold butter to make
creamier. |
