| PENNE ALLA PUTTANESCA |

| Ingredients |
8 cloves garlic, thinly sliced
1 C olives, good quality, pitted and rough, chopped
1/4 C capers, drained
1 large tomato, diced
1 small can anchovies, drained
1 lb penne pasta
drizzle olive oil
to taste salt
to taste pepper

| METHOD |
|
Add pasta to boiling water. When halfway done, heat large skillet.
Drizzle olive oil to heated pan to coat the bottom.
Add garlic, tomatoes, capers and olives.
Sauté over medium heat until garlic is cooked, about 2 minutes.
Mash anchovies under knife or spoon, then add to skillet.
Toss all ingredients.
Season with salt and pepper. Add a handful of parsley.
Drizzle pasta with olive oil.
Serve in pasta bowls.
