| Roasted Tomato Salsa |

| Ingredients |
3 lbs Roma tomato
1 lb tomatillos, peeled and cleaned
6 whole jalapeños
3 cloves of garlic
1/2 C chopped green onions
1/2 C chopped cilantro
1/2 C chopped yellow onion
2 T lime juice
2 T white vinegar

| Method |
| Place tomato, tomatillos, jalapeños and garlic on a baking sheet and
roast in oven until soft.
Remove from oven and cool down.
Place tomatoes, jalapeños and garlic in food processor or blender.
Add rest of ingredients and mix. |
