| SPAGHETTI DELLA CASA |

| Ingredients |
20 oz large shrimp, peeled, de-veined and chopped
1 minced shallot
1 T capers
1/4 t salt
1/4 t black pepper
3 oz unsalted butter
1 C marinara sauce
1/2 oz cognac
1 1/2 C heavy cream
1 1/4 lb spaghetti

| Method |
|
In a saucepan of 10 inches in diameter, melt the butter.
Add the shallots until they become translucent, about 1 minute.
Add the shrimp, capers, salt and pepper, and let braise for
about 2 minutes.
Deglaze with the cognac. Add the heavy cream and reduce to 2/3,
about 6 minutes.
Pour in the marinara sauce and cook for 5 minutes longer.
Once pasta is cooked al dente and well drained, add it to the saucepan and amalgamate for about 45 seconds.
Serve. |
