| Poached pears in red wine |

| Ingredients: pears |
15 peeled pears
2 bottles red wine (3L)
600g brown sugar
1 vanilla pod
1 cinnamon stick
1 teaspoon allspice
5 cloves

| Method |
|
Make a single syrup with the above.
When syrup is boiling, put in peeled pears, until cooked.
Reduce syrup to a glaze.
When pears have cooled, pipe in Ganache. |
