| Ingredients for Crème Brulee |
41/2 cup Heavy Crème
1/2 cup Granulated Sugar
11/4 Egg Yolks
1 ea Vanilla Bean
1/2 tsp Salt

| Method for Crème Brulee |
|
Combine ingredients in a sauce pan, mix well
with a wire whisk. Heat slowly while mixing
cream so it doesn’t scorch or break. When
heated to 155º F remove from flame, strain
through fine chinois. Pour 8 oz into each brulee
cup. Place in shallow hotel pan with 1 inch of
water. Cover with plastic and foil. Place in 300º F
oven for 45 minutes. Remove when set, allow to
cool, wrap, label and date. Store in refrigerator
until service.
At time of service, lightly sprinkle with granulated
sugar, caramelize the sugar with a kitchen torch
or under a broiler. This dish can be garnished
with fresh fruit. |
