| Ingredients |
8 Roma Tomatoes
1/2 c Extra Virgin Olive Oil
6 Cloves Garlic, chopped
1/2 c Fresh Basil
To taste Kosher Salt and Pepper
6 slices Crusty Italian or French Bread (slightly stale if
possible) |

| Method |

Chop tomatoes into 1/2 inch dice.
Cut basil into chiffonade.
Combine tomatoes, garlic, basil, oil, salt and pepper.
Taste for seasoning and adjust as necessary. (There are two
common mistakes in this dish, not enough salt or oil. This
dish is very simple. The ingredients must be the highest
quality possible).
Let marinade for at least 1/2 hour.
Grill bread on both sides until golden brown.
Brush bread with olive oil.
Top with tomato relish.
Serve immediately. |
