| Ingredients for Stinco d’Agnello |
4 Lamb Shanks (14 oz each)
1 Carrot (chopped)
1 Celery Stalk (chopped)
1 medium White Onion (chopped)
1 clove Garlic
1 cup Red Wine
1 tbsp Tomato Paste
1 Bay Leaf
1 pinch Salt & Pepper
1 cup Flour
4 cups Water
1 tbsp Olive Oil

| Method for Stinco d’Agnello |
| Dust the lamb shanks with flour, salt, and pepper.
Sear in a pan over medium heat until nice and golden
brown. In a large cast iron pan, heat olive oil, vegetables,
garlic, tomato paste, bay leaf, red wine, and lamb
shanks over medium heat until alcohol evaporates
(several minutes). Cover all with water, and slow
braise (low heat) for four hours. Transfer to a 325º
oven and cook again for a minimum of 4 more hours. |
